
Hello, how are you today? I hope you are all well. Today, I am going to share a super quick, very tasty, and easy make. It is called “vScallops Pasta”. You can make this dish in under 10 minutes with a few simple ingredients. That’s got cooking it.
Ingredients for vScallops Pasta
80g spaghetti
1 glove of garlic
1 medium size of king oyster mushroom, thick cut
1/4 to 1/2 of red onion, diced
5-6 pieces of sun-dried tomato, diced
2-3 gherkins, diced
1/2 teaspoon of chilli or chilli flakes (optional)
1 handful of spinach
seasoning with salt and pepper

Method
- Non-stick pan on medium-high heat, add some oil and pan-fried the oyster mushroom until golden brown, around 3-4 minutes. Set aside.
- Cook the pasta according to the package. cook for less than 2 minutes.
- Get another non-stick pan, on medium heat, add oil and quickly saute the onion, garlic and chilli. Lightly colour. Make sure don’t burn the garlic
- Follow by sun-dried tomatoes and gherkins. Sautee around 2-3 minutes. Season with salt and pepper for taste.
- Pour some pasta cooking water for another 1 minutes, then throw the pasta and spinach into the pan. Cook for another 2-3 minutes. Taste seasoning if you need it.
- Plate up and enjoy!!!

Note
- When you pan-fried oyster mushrooms, make sure you slice oyster mushrooms thicker. It is because the mushroom will shrink.
- Try not to overcook the pasta. The pasta is going to finish off in the sauce. Cook the pasta for less than 2 minutes whether the package recommends.
