
Hello everyone, I hope you’re all doing well. Today, I’d like to share a recipe for Vegan Paella that requires only one frying pan, making cleanup a breeze. It’s a great dish to enjoy without any extra hassle. Let’s get cooking!

Ingredients needed for vegan paella
1 small red onion, finely chopped
3 cloves of garlic, finely chopped
150g asparagus, break off the woody part and chop into bit size
1 bunch of broccolini, chopped into bit size
1/2 red capsicum, dice
1 tomato, dice
2 tbsp olive oil
1 can of red beans, drain all the water
2 tsp sweet paprika
pinch of salt, and pepper
1 1/2 cups veggie stock
1 cup arborio rice or regular rice
Method
- Chop all the veggies into dice
- Heat up a nonstick pan to medium heat. Add the olive oil followed by the red onions. Sauté for 2min. Add the garlic, red beans, and asparagus(stems part). Sauté for another 1-2min
- Add the sweet paprika or hot paprika and give the pan a stir. Add the capsicum, salt, pepper, and tomatoes. Sauté for 1-2min
- Add the veggie stock and distribute the rice throughout the pan. Then, gently submerge the rice into the liquid and bring it to a boil
- Cover and cook on medium-low for 15min. Tests if you need more seasoning. Through the tip of asparagus and broccolini. Then, turn the heat off and let the rice steam for 10min
- Turn the heat to medium-high and cook the rice uncovered for 4-5min. Squeeze over some fresh lemon juice and serve.

Note
- This dish can be prepared as risotto or you can partially cook the rice to about 70-80% and finish cooking it in the pan. This method can help you save cooking time.
- Did you know that you can prepare it in a rice cooker? However, please note that you may not achieve the desired caramelized colour and flavour.
