Hello everyone, how are we these days? I hope you are all well. Do you like noodles? Some like Dan Dan noodles? Dan Dan Noodles is a popular Sichuan dish. It consists of spicy sauce, vegetables, and minced meat served over noodles. In this recipe, I would like to share with you a vegan version of Dan Dan Noodles. I replaced meat with mushrooms and tofu topping. It is also served with bok choy. Please enjoy it and that’s getting cooking!!!

Ingredient for 2
1½ Tbsp sesame paste or tahini paste
1 Tbsp chilli oil
1 Tbsp spicy chilli sauce or Sichuan chilli paste (option)
½ tsp toasted sesame oil
1½ Tbsp soy sauce
1½ cup (360 g) broth
1 portion of ramen noodles
1 head bok choy, blanched
Broth
2 cups (480 g) water
6 (25 g) dried shiitake mushrooms
1 large piece (15 g) kombu
1¼ cup (300 g) oat milk
Tofu Mushroom topping
½ block (200 g) firm or extra-firm tofu, break into small pieces
500g of any type of mushroom + 6 (25 g) dried shiitake mushrooms for broth, diced.
1 thumb ginger, diced
2 Tbsp miso
1 Tbsp soy sauce
2 Tbsp mirin
Method

- For the broth, pure the water, dried shiitake mushrooms and kombu into the saucepan. Slowly bring up to boil. Right before boiling remove the kombu. Let the mushroom continues boiling for another 10 minutes. Remove the mushroom. Turn the heat down to low-medium heat. Pure the oat milk. Let it simmer for another 5 minutes.
- To prepare the miso tofu mushroom topping, get a frying pan on medium heat, pure some oil, throw in the ginger, and saute for 2 minutes. Add the tofu and mushroom and saute for 5 minutes or until get some colour. Then the miso, soy sauce and mirin, saute for 1 minute. Remove from the heat and set aside.
- Cook the noodle according to the package. Blanched bok choy on the same pot.
- To assemble, in the bowl, whisk together the sesame paste, soy sauce, chilli oil, chilli sauce, sesame oil, and broth until well combined. Add the noddle, bok choy and miso tofu mushroom topping. Drizzle some chilli oil on top.
- Enjoy the homemade Dan Dan noodle.
Note
- You can cook a bit more for miso tofu mushroom topping. It goes well with rice.
- Take some time to cook the tofu and mushroom. Get the most flavour out.
- I personally like thick noodles like udon noodles. You can use any type of noodle you like.
