Vegan Main | Vegan Club Sandwich

Hello, how are we these days? I hope you are all well. In this post, I will share a dish you can have for breakfast, lunch or brunch. It calls – The Vegan Club sandwich. Traditionally, a club sandwich is served with chicken, bacon and egg. Since we are doing the vegan version, I replace these with tofu and tempeh. I also marinade the spicy sauce. The spicy sauce can cover the weird taste of tempeh. Enjoy it~~

Ingredients

2 slices of your favourite bread or toast

2 slices of tofu

2 slices of tempeh

1 king oyster mushroom, thin slice

1 or half of avocado, slice with salt, pepper, and olive oil

1 leave of lectures

1 tomato, 4 thin slices

Spicy chilli sauce

2 tbl soy sauce

1 tbl Miri

1 tbl maple syrup, I use rice syrup

1 tsp Taekyung Red Pepper Powder (Korean chilli powder)

1 tsp Korean Chilli paste

1 tsp of sesame oil

Method

  1. Mix the sauce and marinade tofu and tempeh for half an hour. If you can do it beforehand, the taste will be much better
  2. Pop the tofu and tempeh in the oven on the bake setting at 180C for around 20 minutes. Or you can pan-fried the veggie on medium-low heat.
  3. Once the veggies are done, you can assemble the sandwich which way you like. As long as they stay together
  4. I also sever with kale and apple, kiwi, mix berries smoothie.
  5. Enjoy it

Note for Vegan Club Sandwich

  1. I use rice syrup for spicy chilli sauce. I found that rice syrup was less sweet than maple syrup
  2. You can prepare a couple of portions and save them in the fridge. In the morning, you microwave the tofu and tempeh, then you slice some tomatoes, avocados and tear some lectures and heat up the veggie and toast.
  3. When you pan-fried the veggies. You do keep an eye on it. It can get burned quite easily. It got sweet and soy on it. Do be careful about that.
  4. For the Spicy sauce, you can change any ratio to suit your preference.
