
Hello everyone, how are we these days? I hope you are all well. Have you heard of a meat replacement called seitan? Seitain is made from wheat flour or vital wheat gluten. It is rinsing away the starch in the wheat dough, leaving just the high-protein gluten behind. Seitain is excellent grilled, pan-fried, roasted or stew. You can add seitan to any vegetarian or vegan dishes. It is a chewy, hearty texture, and takes on the flavour of what it’s cooked with. However, it is not suitable for a gluten-free diet. I found a simple recipe for how to make your seitan and also I am going to show you how I cook with it. In this post, I am going to do a seitan salad. So without further ado, that gets into cooking !!!!!!

Ingredient
200g gluten flour
30g other flour like chickpea flour
20g nutritional yeast
220ml cold water or veg stock (add little by little)
1 tbs paprika, other spices (optional)
1 tbs soy sauce
1 tbs olive oil
1 punch of asparagus
4-6 cherry tomatoes, chop in half
3 leave of cos lectures, tear into half
60ml balsamic vinegar
Method

- To make seitan, mix all the ingredients in a bowl and knead for about 10 minutes, rest for 10 minutes and knead again for 2-3 minutes. It should be elastic at the end. Chop into 3 or 4 equal sizes pieces.
- Simmer for 30-35 minutes in a saucepan of water or veggie stock. (I cook in the steamer. After 30-35 minutes drain the water and let it rest for 10 minutes.
- Heat up the non-stick pan on medium heat, pour some oil and pan-fried the seitan on both sides for 5 minutes. Remove it and set it aside.
- In the same pan, pour some oil and quickly sautee the asparagus for about 2 minutes or get some colour.
- Pour the vinegar into the pan and follow by seitan. Let it cook for around 1 minute. Taste the dressing if you need more seasoning.
- Ready for serve.

Note for seitan salad
- You can make a batch of seitan and portion it. Freeze in the freezer.
- I do skip the simmer part. I just let it rest before I cook it.
- Instead of using water, I think you can add the veggie stock to the mixture. Also, you can add any spices to the mixture. To make it more tasting.
