Vegan Dessert | Strudel

Hello, how are we these days? I hope you are all well. Strudel is a dessert made with Christmas dinner leftovers like pudding, chocolate, and nuts. I put my twist on Jamie Oliver’s recipe. The ingredients that you can easily find in the supermarket or you can use what you have in your household. You are also more than welcome to go to Jamie Oliver’s website.

Ingredients

2 tbs of coconut oil

3 ginger biscuits

1 tsp of brown sugar for sprinkle

1 or 2 sheets of vegan puff pastry. I use 2 sheets to make it thick and crisper

2 x 150 dairy-free chocolate bars

150g of frozen berries

a good handful of cashew nut

1 apple

2 tbl of maple syrup (you can add more if you want more sweety)

2 tsp cinnamon

Method

  1. Preheat the oven to 200ºC, put the mixed berries into the saucepan, and add a slash of water. Cook on medium-low heat and cook until like jam. Once it is done set aside and let it cool down.
  2. Get the puff pastry and put it on top of the baking tray, rub or brush coconut oil on the pastry and put the jam over the pastry.
  3. Break the chocolate bar, biscuits, and nuts and sprinkle over the pastry.
  4. Using a box grater, coarsely grate the apple, and sprinkle it and maple syrup over the pastry.
  5. Carefully roll up the pastry and transfer it to the baking tray. Bruch or rub some of the coconut oil over the pastry then sprinkle over a little brown sugar. Bake on the bottom of the hot oven for 35 minutes, or until crisp, and golden.
  6. Once time is up, leave to cool and cut the pastry into 2cm slices.
  7. I serve the mixed berries jam and a scoop of homemade chocolate mousse.
  8. Enjoy it!!!
