Vegan Main | Vegan Chicken with Orange juice

Hello, how’s everyone doing? I hope you are all doing well. Today, we are going to cook vegan chicken with orange juice. It may sound strange, but it offers a combination of sweetness and tanginess. For a healthy option, you can squeeze your own oranges for the juice. The main ingredients are tofu and orange juice and that’s get cooking!!

Ingredient

  • 200g firm tofu (pressed and tear into chunks)
  • 3 tbsp cornstarch
  • 1 bunch of broccolini
  • 1/2 carrot (cut long strips)
  • 1/2 red capsicum (cut long strips)
  • 200g Cabbage (tear into bite size)
  • seasonally with salt, pepper

Orange Sauce

  • 1/2 cup (125ml) orange juice
  • 2 Tbsp soy sauce
  • 4 tbsp rice syrup
  • 1 tsp dry chilli (optional)
  • 2 tbsp starch + 3 Tbsp water

For Crispy tofu

  • Get the bowl, mix with tofu and cornstarch and bake at 200c for around 15 minutes or until lightly brown.

Method

  1. Heat up fry pan on medium heat along with olive oil, then sautéed carrot, capsicum and broccolini until soft. Then throw in the cabbage and cook until soft.
  2. Pour in the sauce and tofu into the pan, and cook it for 5 minutes on medium-high heat. Stir until thickened.
  3. I serve it with rice
  4. Enjoy it!!!

Note

  • You can fry the tofu in a non-stick pan on medium-high heat. If you have only one non-stick pan and time pressure, the air-fry is a good choice.
