
Hello, I hope everyone is doing well. Today, I’d like to share a simple that doesn’t require any advanced cooking skills. It is called Soba with Peanut Butter Sauce. All you need is a pot to cook soba noodles and veggies. In a bowl, mix the peanut butter sauce. It’s that simple! So, let’s start cooking without any further delay!
Ingredients
1/2 bunch of soba noodles
1/2 carrot, peel and slice into a long stick
1/4 of red capsicum, deseed and sliced into a long stick
30g of Edamame bean
2 bowls of ice water
Peanut butter Sauce
2 tbs peanut butter
1 tbs soy sauce
1 tbs maple syrup or rice syrup
1/2 lime or lemon juice
1 tsp chilli paste (optional)
30ml of cooking water
Pickle cucumber
1/2 cucumber
2 tbs white sugar
2 tbs white vinegar
pinch salt
1/2 glove of garlic (optional)
pinch chilli flakes (optional)

Direction
- Get a hot pot of water and cook the soba noodles according to the package.
- Wash out any starch from the soba noodles and sit in ice water set aside
- Blanched the carrot and capsicum for 1 minute and edamame bean for 30 seconds. Transfer into ice water and set aside
- Drain the soba noodles and veggies well then transfer into peanut butter, mixing well. Then transfer to a serving plate.
- Finish with some black sesame seed, pickle cucumber and drizzle some chilli oil.
- Enjoy it!!
Note
- Pickle cucumber can be left overnight for better flavour.
- You can adjust the peanut butter to your taste.
- If you don’t have ice cubes in your fridge. Pour some water into the bowl and put it into the freezer before you cook this dish.
- You can serve this dish in the main course. You just cook a full punch of soba noodles.
