
Hello, how is everyone doing these days? I hope all of you are well. In this post, I would like to share a recipe suitable for cool weather. It is called Seitan with Red Wine Stew. The ingredients are quite simple; you can find pretty much everything at the supermarket, except for the seitan. You can buy the plant-based meat; it works well. So without further ado, let’s get into cooking!
Ingredients
Seitan
200g gluten flour
30g other flour like chickpea flour
20g nutritional yeast
220ml cold water or veg stock (add little by little)
1 tbs paprika, other spices (optional)
1 tbs soy sauce
1 tbs olive oil
Red Wine Stew
tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
2 large carrots, sliced
1 Potato
1 handful of peas
1 cup vegan or non-alcohol red wine
3 cups vegetable broth
2 tablespoons tomato paste
1 teaspoon mixed herbs
2 bay leaves
2 tablespoons soy sauce
1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
Salt and pepper to taste
Method

Make and pan-fried Seitan

Making Red wine stew
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and cook until it becomes translucent.
- Add the minced garlic, carrots and potato. Cook until the vegetables are slightly tender. Then add tomato paste and mixed herbs.
- Pour in the red wine and cook for a few minutes until it reduces slightly.
- Add the vegetable broth, bay leaves, and soy sauce. Stir well.
- Add the cooked seitan pieces to the pot.
- Bring the stew to a boil, then reduce the heat and let it simmer for about 30 minutes, Then add the peas and cook another 2 minutes until all vegetables are fully cooked and the flavours are well combined.
- If you prefer a thicker stew, add the cornstarch mixture and stir until the stew thickens.
- Season with salt and pepper to taste, remove the bay leaves
Serving
- You can serve it with rice and a glass of red wine or mashed potatoes.
