Vegan Salad | Roasted Pumpkin and grape salad

Hello everyone how are you today? Today, I am going to share a salad dish. It is called Pumpkin and Grape Salad served with green pesto. It is straightforward, quick, and less effective. You only need the oven and blender. You can serve it as an entree or side dish. That’s getting cooked!!!

Ingredient for Pumpkin and grape salad

1 Medium pumpkin, cut into chunks

1 Cos Lettuce, tear or roughly chop

1 handful of red grapes

1 handful of cherry tomatoes, cut into half

10g of pumpkin seeds for garnish

Olive oil

Salt and Pepper

Green Pasto

1 handful Spinach

60g of natural Yeast

30g pumpkin seeds

1 garlic clove

80 ml extra virgin olive oil

25 g fresh basil

1 tbsp lemon juice

1 tsp lemon zest

Salt and pepper for taste

Method Pumpkin and grape salad

  1. Cut the pumpkin into big chunks and sprinkle with olive oil, salt and pepper. Roast in the oven at 180c for 35 minutes.
  2. Use a food processor or blender to make the green pesto.
  3. Get a mixing bow, mix everything together then serve.
  4. Enjoy it

Note

  1. Make sure you chop the pumpkin in the same size. So they can cook evenly.
  2. You also can add some natural yogurt giving the pesto extra freshness.
