
Hello, how are we these days? I hope everyone is well. In this post, I would like to share a recipe for an elevated version of avocado on toast called “hummus on sourdough.” This recipe includes avocado and tomatoes. You can serve it as a light snack, light breakfast, or as a starter. Let’s get cooking!
Ingredient
1 or 2 pieces of sourdough
1/4 tomato, dice
1/2 avocado, dice
4 cherry tomatoes, cut in half
pinch chilli flakes (optional)
salt and pepper for seasoning
few rockets for garnish
Hummus
2 cans of chickpeas drained & rinsed
1 garlic, peeled
1/2 or 1 lemon juice. You can add more for more acidity
4 tbs Tahini
salt and pepper for seasoning

Method
Topping
- Preparing the topping with diced tomato, and avocado and cutting the cherry tomatoes in half. Then set aside for serving.
- Grill or toasted the sourdough.
Hummus
- Drain and rinse the chickpeas, then place them into a saucepan and cover with water. Cook the chickpeas over high heat until they start to bubble, roughly 5-6 minutes, or until they have softened.
- Transfer the chickpeas to the blender with 125ml of the cooking liquid, lemon juice, garlic and tahini. Blitz until smooth and creamy.
- Ready for serve.
Serving
- Place the hummus on the sourdough and follow with avocado, tomato and cherry tomatoes.
- Finish with a pinch of salt, pepper, and chilli flakes and squeeze some lemon juice.
- Garnish with rocket and ready to serve.

Note
- You can add some spiced hummus for extra taste. Things like paprika, or cumin
