Vegan Entree | Carrot Rapée

Hello! How have you been lately? I hope everything is going well with you. Today, I want to share a super simple recipe that requires minimal effort and only one main ingredient: carrots. You might think of carrots as just an everyday vegetable, but they are quite versatile. This recipe is called Carrot Rapée, a French-style grated or sliced carrot salad or pickle. It’s sweet, tangy, fresh, and crisp. You can serve it as a side dish or a starter. I hope you enjoy it! Now, let’s get cooking!

Ingredients

2 carrots

20ml white wine vinegar

70ml olive oil

90ml orange juice

Salt and black pepper to taste

a few raisins

pinch of cumin powder (optional)

Instruction

  1. Peel the carrot using a speed peeler, then slice it thinly. In the mixing bowl, add the carrot and salt, then mix for 1-2 minutes and set aside for about 5 minutes.
  2. In another mixing bowl, add the orange juice, vinegar, salt, pepper, and cumin powder. Mix well and set aside.
  3. After 5 minutes, add the carrot water to the dressing, adjusting the seasoning if necessary.
  4. Pour the dressing onto the carrots and mix through. Then marinate for 30 minutes. The longer it sits, the more flavour it develops.
  5. To serve, I serve a piece of sourdough with a carrot pickle and a few raisins.
  6. Enjoy it!
