Hello everyone, how are we these days? I hope everyone is doing well. Today, I’d like to share a simple recipe that uses ingredients easily available at your local grocery store. It is called Banana crepes. This banana crepes recipe uses the natural sweetness of the fruit and requires minimal added sugar. The kids can enjoy it during their weekend mornings. So that’s get cooking!!!!

Ingredients
- 3 banana rip + 1 slice banana
- 1/2 cup or 150g of all-purpose flour
- 1 tbsp flax seed meal
- 1 tsp baking powder
- 1 cap full of vanilla extract
- 1 cup of oat milk or any plant-based milk
- 1 tsp cinnamon
- 1 tbsp Nutella
- mix berries or oranges for filling
- Oil for your choice (vegan butter, grape seeds, rice bran oil etc)
Instruction
- Combine all the dry ingredients in a bowl and stir until they are well-mixed.
- Mash the banana and combine it with wet ingredients. Mix until smooth.
- Heat a non-stick pan over medium heat and add a small amount of vegan butter. Pour a thin layer of the batter onto the pan, tilting the pan in a circular motion so that the batter evenly coats the surface.
- Cook the crepe for about 1 minute, until the bottom is light brown. Use a spatula to loosen the crepe, then flip it over and cook the other side for about 30 seconds.
- Spread some Nutella in the crepes, and chop some banana, berries or kiwi. Then roll it up.
- Enjoy it!!!!


Note
- I use a 20cm frying pan and can cook around 6 pieces in it.
- You can serve any soft fruits. It gives some natural sweetness.
- Please check the ingredients of Nutella. Some of them may contain milk, so please read the label before buying it.
